Matzoh brei is a traditional Ashkenazi Jewish dish made with matzoh (unleavened bread) and eggs. It is often served as a breakfast or brunch dish, but can also be enjoyed as a snack or light meal.
Ingredients

2 sheets matzoh

2 - 3 tbsp butter or margarine

4 large eggs - beaten

salt to taste

black pepper to taste
optional chives - for serving

1 tbsp sugar - more to taste

honey or maple syrup or jam - for serving

Directions
Under hot or boiling water, quickly rinse matzo sheets. Set it aside and let sit to soften while you prepare the pan.
Place a large, preferably nonstick skillet over medium-high heat and add butter. Once it melts, break matzo sheets into bite-size pieces and add to pan. Sauté matzo in butter until it browns all over, about 2 minutes.
Add eggs, salt (and pepper) to pan and scramble the mixture until it set, about 1 minute. Sprinkle with sugar (if you’re making it sweet) and toss well.
Serve matzo brei sprinkled with salt and topped with chives (savory), or with additional sugar, honey, syrup or jam (sweet).
